Sweet & Spicy Lemon Roasted Turkey Breast
(Serves 2-4)
Roasted Turkey:
2 tablespoons all-purpose flour
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
3-pound bone-in, skin-on turkey breast (bring to room temperature for 30 minutes and pat dry with paper towel)
Cooking spray
Sweet & Spicy Lemon Sauce:
¼ cup maple syrup
¼ cup soy sauce
¼ cup brown sugar, packed
Zest of 1 lemon
¼ cup fresh lemon juice
2 tablespoons sambal oelek
1 tablespoon olive oil
1 teaspoon ground black pepper
2 cloves garlic, finely grated
Roast the Turkey Breast
Preheat the oven to 350 degrees F. In small mixing bowl, whisk together the flour, smoked paprika, salt and ground black pepper. Dust the turkey breast with the flour mixture and shake off any excess. Transfer to a small baking sheet and spray with cooking spray. Roast until golden brown and cooked through (165 degrees F), about 80-95 minutes. Let the turkey breast rest while you prepare the sauce.
Make the Sauce
In a small pot over medium-low heat, whisk together all the sauce ingredients. Cook until slightly thickened, about 10-12 minutes, whisking occasionally. Remove turkey meat from the bone, slice, and drizzle with sauce right before serving.
